Add the oil or butter and mix everything together lightly with a spatula. To make the vanilla sponge cake:

Preheat the oven to 180 °C and line a 20 cm cake tin with baking paper. In a large bowl, whisk the eggs, sugar and vanilla paste until the mixture is pale and fluffy. In a separate bowl, sift the flour, baking powder and salt. Gradually add the flour mixture to the egg mixture, kneading gently with a spatula after each addition until the dough is smooth and lump-free. Add the melted butter to the dough and stir until the butter is incorporated.

Slowly add the milk and stir gently until the batter is smooth and creamy. Pour the batter into the prepared baking tin and smooth the top evenly with a spatula. Bake for 25 to 30 minutes, or until a toothpick inserted into the centre of the pastry comes out clean. Remove the pastry from the oven and leave to cool on the baking tray for 10 minutes. Run a knife around the edges of the bixcuit to release it from the tray, then transfer the pastry to a wire rack to cool completely.

Once the pastry has cooled, it can be served as it is, or decorated with icing or whipped cream, if desired.
